How should the complete paid day be mapped?
Begin with ingredient receipt and storage. Trace preparation, loading, pre-trip checks, travel, parking, setup, each service period, replenishment, close-down, return, unloading, wastewater and waste handling, cleaning, records and equipment care. Assign every task to a paid person and real location.
The same employee cannot prepare at the base, drive and serve on the truck at the same moment. Retain breaks, handoffs and any duty or qualification boundary that changes the feasible roster.
How should the menu and truck test each other?
Trace every menu cohort through cold or dry storage, preparation, cooking, holding, assembly, packaging and handoff. Record the bottleneck equipment and time per whole order, together with water, wastewater, power, ventilation, fire suppression, temperature and replenishment limits.
Stress the system with an ordinary stockout, equipment interruption, delayed arrival and weak service period. A theoretical hourly rate is usable only when preparation and the complete truck system can support it safely.
What must be confirmed before paying for the truck or a location?
Connect each truck, base and vending-location dependency to the party that can answer it. Record the exact activity, vehicle, menu, equipment, address, source, applicability, required work, payment date and consequence of delay.
Make the next irreversible payment conditional on the unresolved item that could stop lawful service or materially change the installed scope, operating calendar or cash requirement.

What this changes: A 4.5-hour selling window is only part of a 24-person-hour paid day. The owner should reject any schedule that reaches its order target by omitting the work before departure or after service.
